Saperavi.
Considered to be one of the oldest Georgian red grape vine varieties. It originates from southern Georgia, but is most common in Kakheti, where it gives the best results. It is an extractive wine with a characteristic bouquet, a harmonious taste, and pleasant astringency. Its alcoholic strength ranges from 10.5-12.5% and titrated acidity 5-7%. It is known to have been in production since 1886. Saperavi grapes produce very deep red wines that are suitable for extended aging.
Saperavi from Georgia gradually spread to the neighboring republics. In Azerbaijan, it spread mainly to the old Georgian province of Saingilo, where plenty of Saperavi and Rkatsiteli are still found. Saperavi is less common in Armenia. It is mainly found in the Alaverdi, Shamshadin and Ijevan districts bordering Georgia. In Dagestan, Saperavi spread from Kakheti, mainly in Darubandi and Makhachkala districts.
Rkatsiteli.
belongs to the ecological-geographical group of the Black Sea basin. Rkatsiteli manages to fully ripen in the native Kakheti viticulture regions from mid-September to mid-October. It takes 140-150 days to ripen. It is very high yielding (15 tons per 1 hectare), which is why it is very popular among Georgian growers. Is frost resistant.
Rkatsiteli produces dry white table wine "Rkatsiteli" by local Kakhetian method. Rkatsiteli, along with Khikhvi and Mtsvane wine is also used in blending to make "Rkatsiteli Khornabujuli" wine, which is also of Kakhetian type. Rkatsiteli, along with green wine, is used to make white Tibaani wine. Rkatsiteli, Saperavi and Cabernet Sauvignon are used to make semi-dry pink table wine.
Kisi.
Based on the evaluation of the botanical and agricultural marks of the variety, Kisi is undoubtedly a newer variety than Rkatsiteli. Whose origin by I.Javakhishvili ( a Georgian historian and a linguist) was written to be in the V century AD.
Thus, Kisi is a local, younger variety than Rkatsiteli. Kisi is characterized by a great ability to accumulate sugar and maintains a fairly high acidity with it. The sugar-acidity ratio proves that you can get quality wine from it.
According to long-term observations, the sugar content of kisi in Telavi and Uriatubani varies from 20% to 24%, and the acidity is from 6.6 to 10.8. high quality Kakhetian wine type is made from Kisi, but currently due to the small distribution of Kisi only wine is rarely made from it, often is produced along with other varieties.
Mtsvane Kakhuri.
In the white varieties of Kakheti, green gives the most delicate and aromatic table wine. It is used to make both European and Kakhetian high quality wines.In Kakheti viticulture regions, grapes are fully ripe from the second half of September.
Partially green is also used as a table grape.Green is best blended with Rkatsiteli and it’s one of the most common wines in Kakheti. It’s Also to improve the quality of other white grape wines . Khikhvi.
is one of the best white grape Georgian vine varieties. There are currently very few vineyards in Kakheti that are compact from Khikhvi. The shortage of vineyards has been a big problem not only now, but also in the last century. Khikhvi ripens in mid-September and its yield is relatively small. Has a high ability to accumulate sugar, especially the khikhvi cultivated in the Kardenakhi zone.
